Grilling season might just be my favorite time of year—not just for the sunshine, but because there’s something so simple and satisfying about cooking outside.

And you know what makes those grilled favorites even better? The perfect homemade bun. 🍞

I’ve recently updated my sourdough hot dog and hamburger bun recipe to make them bigger, softer, and fluffier than ever.

The secret? I use a simple flour roux technique that gets added to the dough, giving the buns that soft, pillowy texture.

And if you want to take them up a notch, you can use a little diastatic malt powder. It adds a bakery-like flavor, improves browning, and enhances yeast activity for that perfect rise.

  • Food Scale - Weighing ingredients ensures your recipes turn out just right every time.
  • Aluminum Baking Pan - I bake the buns close together in an aluminum baking dish to help them rise taller and bake up evenly with that perfect golden top.
  • Diastatic Malt Powder - Optional, but it adds great flavor, helps with rise, and gives a beautiful golden brown finish.
