Sourdough ice cream - does that sound totally delicious or just plain weird to you? 🤔🍦

I wasn’t sure at first either. But when my sister gave me her barely-used ice cream maker a few months ago, I knew I had to experiment.

And as a sourdough baker, it didn’t take long before I thought, what if I put sourdough discard in ice cream?

And let me tell you - it is magical. ✨

I wanted something more exciting than plain vanilla (though I’ve got that option too), so I landed on salted brown butter.

It’s rich, nutty, and just a little tangy from the sourdough. And the texture? Incredibly smooth, with little pockets of creamy brown butter throughout.

If you have an ice cream maker, this one’s worth a try!

It’s amazing on its own, but even better with sourdough apple crisp, brownies, or chocolate chip cookies.

Brown Butter Sourdough Ice Cream

Creamy, rich, and slightly tangy, this salted brown butter sourdough ice cream is a unique and delicious way to use up sourdough discard!


To help you get the best results, here are some ingredients and tools I recommend:

  • Cuisinart Ice Cream Maker - The ice cream machine I use. Affordable and easy to use, but requires you to freeze the bowl 24 hours in advance.
  • Compressor-Style Ice Cream Maker - These have built-in cooling systems, so you don’t need to pre-freeze anything. They allow for back-to-back batches but are more expensive and take up more counter space.
