Have you noticed the days starting to feel a bit longer yet? ☀️

Even though it’s only January, I can feel the days slowly starting to stretch just a tiny bit. And honestly, I'm ready for it.

We finally had some sunshine after days of gray, so I soaked it up by spending some time outside with my chickens.

The extra daylight must making them happy too, because they’ve started laying more again. I’m up to about 8 eggs a day now. 🥚

I also made some progress on the room I’m creating for my cats.

My stepdad came over this weekend and helped me put up shelves along the walls so they can climb and perch. Watching them hang in there this week has made me so happy. They’re already obsessed. 💛

Since last week I shared whole wheat sourdough, I thought I’d keep the healthy streak going with a few of my favorite sourdough oat bread recipes. 🌾

Adding soaked oats makes the bread super soft, hearty, and packed with extra fiber. It's great for breakfast, sandwiches, or just enjoying fresh from the oven.

Sourdough Oatmeal Sandwich Bread

  • Straight-Sided Containers - Easier to track bulk fermentation.
  • Bread Sling - Helps you safely transfer dough into a hot Dutch oven.
  • Lame - Gives you control and confidence when scoring your dough for an even rise.
